Last Saturday, the Women’s Ministry of my church organized an event called “Mugs & Muffins”, a gathering for us to learn more about God’s faithfulness through the testimony of older sisters. The speaker on that day was a good biblical model as described in Titus 2, and indeed I learned so much from her sharing.
But this article is more about the muffins. A dear sister made lots of them for the event using the harvest from her garden. I told her I’d never had muffins so moist and delicious in my whole life and asked her for the recipe. As humble as she is, she requested to remain anonymous but gladly shared her recipe and a delightful write-up about herself.
The recipe and her brief bio are shown below:
Gardening is one of my greatest joys! My garden is a quiet place where I can reflect on God’s creativity, goodness, beauty, provision, and faithfulness.
As I pull weeds, sweat, and deal with unwanted pests, I remember sin’s consequences and look forward to the new heaven and earth spoken about in the Bible (II Peter 3). Seeds buried in the soil sprout, spring to life, and grow into productive vegetables, flowers, or fruit as they are nourished and tended. I learn that work can be pleasurable and rewarding. I realize that even imperfect young plants (and people) can thrive when given attention and encouragement.
This year, I planted eighteen squash seeds in May. In late September, I harvested 38 beautiful butternut squashes! I like to share my produce with neighbors, friends, and family. I also enjoy cooking and baking creatively with whatever is ready in my garden. This pumpkin/squash muffin recipe is one example: easy to make, and delicious to share with a mug of coffee or tea.
